Traditional Irish Soda Bread

 

Ingredients:

  • 1/2 cup cornstarch
  • 3/4 cup all-purpose flour
  • 1 ¾ cup white whole wheat flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 4 tbsp (1/2 stick) of butter
  • 1 cup buttermilk
  • 1 batch of Whipped Honey Butter

 

Directions:

  1. Preheat oven to 375°.
  2. Blend dry ingredients together in a mixing bowl.
  3. Add butter to dry ingredients and rub butter with your fingers to incorporate until it resembles breadcrumbs.
  4. Add buttermilk and mix with spoon for 20 seconds to combine until the dough holds together.
  5. Knead on a lightly floured surface 10 times
  6. Shape into a slightly flattened round loaf.
  7. Place on a floured baking sheet.
  8. Cut 3/4 inch deep “X” onto the loaf.
  9. Dust with a bit of flour.
  10. Bake for 40 minutes.
  11. Remove from oven and lay a damp cloth over top to cool.
  12. Serve with Whipped Honey Butter and enjoy!
