Scallops with a Honey - Lime Marinade
Ingredients:
- 1/2 lb. - sea scallops
- 2 T - Alfalfa Honey
- 1 T - olive oil
- 4 tsp. - lime juice
- 1/4 tsp. - lime zest, grated
- 1/4 tsp. - salt
- 1 - lime, cut in wedges
- Fresh parsley for garnish
Directions:
Combine Alfalfa Honey, olive oil, lime juice, lime zest, and salt.
Pat scallops dry with paper towel and add to marinade. Marinate, stirring occasionally, up to 1 hour. Do not marinate longer than 1 hour as scallops can become tough.
Preheat cast iron frying pan.
Arrange scallops in a single layer in the cast iron frying pan. Take care not to over crowd the pan. Sear scallops on both sides until they form a nice brown crust. This should only take a few minutes. Take care not to over cook! The scallops are fully cooked when the side color turns opaque throughout and the top and bottom are lightly browned.
Garnish with freshly chopped parsley and lime wedges.
