Honey Roasted Acorn Squash

  • 1 medium acorn squash
  • 1 Tbs olive oil
  • 2 tsp Crystallized Honey
  • ½ tsp kosher salt
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • ¼ tsp black pepper
  1. Preheat oven to 425°F.
  2. Cut squash in half lengthwise then scoop the seeds out with a spoon. Place the squash cut-side down then cut across into ½-inch slices. We also like to cube some!
  3. Mix olive oil, crystallized honey, salt, garlic powder, paprika and pepper in a bowl.
  4. Add squash to bowl and toss to evenly coat. 
  5. Place the squash in a single layer on a lined baking sheet.
  6. Roast until the squash is fork tender and lightly browned, about 25 minutes.
  7.  Serve and enjoy!
