Blueberry Honey Herbed Pork Loin

Ingredients:
  • 2 1/2 lbs. - boneless pork loin roast
  • 1/4 cup - Blueberry Honey
  • 2 T - Dijon mustard
  • 1/2 tsp. - fresh thyme, crushed
  • 1/2 tsp. - fresh rosemary, crushed
  • 1/2 tsp. - salt
  • Fresh thyme and rosemary for garnish
  • Whole berry blueberry jam

Directions:

Place roast in a glass baking dish.

Combine Blueberry Honey, mustard, crushed rosemary and thyme and salt mixing well. Brush 2/3 of honey mixture over the pork to coat.

Bake roast at 350°F for 1 hour. After 1 hour brush roast with remaining honey mixture. Cook approximately 45 minutes or until internal temperature is 170°F. Cool 10 minutes before slicing.

While roast is cooling gently warm blueberry jam taking care not to over heat and burn.

Slice roast and garnish with fresh herbs and a spoonful of blueberry jam.
